Blueberry Waffles

Ingredients: 
3 cups flour (can substitute 1/2 cup of flour for plain protein powder)
4 tsp. baking powder 
1 tsp baking soda
1 tsp salt
6 Tbsp sugar
2/3 cup butter, melted
4 eggs
4 tsp. vanilla extract
2 cups plain or vanilla yogurt
1/2 cup milk
1 cup blueberries
 
Directions:
Whisk together flour, baking powder, baking soda, salt and sugar. 
 
Whisk together eggs, butter, vanilla, yogurt, and milk. Add to the dry ingredients. Stir in the blueberries. Cook in a preheated waffle iron. Waffles freeze well and then can be toasted.  

Sausage Hashbrown Breakfast Casserole

Ingredients:
1 lb sausage browned
30-32 ounce bag of hashbrowns
1/4 tsp onion powder
1/4 tsp garlic powder
2 cups shredded cheese
1 tsp salt 
8 eggs 
1 cup milk
1 cup egg whites (or substitute for milk)

Directions:

1. Cook sausage and set aside.
2. Add hash browns to skillet and cook until lightly browned. Place hash browns in the bottom of a lightly greased 9 x 13 inch pan. Top with sausage and cheese
3. Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour over hash brown mixture. 
4. Bake uncovered for 35-40 minutes.

Coconut Syrup

Ingredients:
8 Tbsp butter
3/4 cup buttermilk
1 cup sugar
1/2 tsp baking soda
1 tsp coconut extract

Directions:

1. Place butter, buttermilk and sugar in a pot.
2. Over medium heat stir until butter melts and sugar dissolves
3. Bring to a boil and boil for 1 minute
4. Remove from heat and add baking soda and flavoring
5. Continue to stir off the heat for the fizz to die down

Kolaches

 Ingredients:

4 1/2 tsp. yeast

4 cups milk

1/2 cup oil

2 eggs

1/4 tsp. baking soda

2 tsp. baking powder

3/4 cup sugar

1/2 cup butter

1 cup hot mashed potatoes

3 Tbsp salt

9-12 cups flour

Directions:

Dissolve yeast in 1/4 cup warm water with 2 tsp. sugar. Add sugar, milk, butter, oil, mashed potatoes, eggs, salt, soda, baking powder. Beat well. Add 2 cups flour and beat well. Keep adding flour until dough is soft and light. Let rise to double. Make tennis ball size balls and let rise again until light. Fill with desired filling. Let rest for 5 minutes. Bake at 425 degrees for 12-15 minutes. 

Filling:

Eggs, sausage, cheese mixture

Eggs, bacon, cheese mixture

Can add jalapenos or other veggies.

These freeze well uncooked. 

 

Egg Hashbrown Casserole

Ingredients:
1/2 cup bacon bits, cooked
5 eggs
1/2 cup milk
3 cups frozen hash browns (or a carton of Costco hashbrowns)
1/2 tsp onion powder
1 1/2 cups of cheese, divided

Directions:
1. Combine eggs and milk. Stir in bacon, hash browns, onion powder and 1 cup shredded cheese. Pour into 8x11 baking pan.

2. Cook at 350 for 30 minutes or until knife comes out clean. Sprinkle 1/2 cheese on top and cook for another 5 minutes.

Wheat Pancakes- Janel

Ingredients:
1 cup buttermilk
1 cup wheat kernels
2 eggs
1/2 cup buttermilk
1 tsp salt
1 tsp baking soda
1/2 cup oil

Directions:
Blend 1 cup buttermilk and wheat kernels for two minutes.  Add the rest of the ingredients and blend for 4 more minutes.  Cook on a hot pan. 

Tortilla de Espana

Ingredients:
5 potatoes, peeled and diced
1 onion (optional)
4-5 eggs
Salt to taste
Oil for frying

Directions:
Fry cubed potatoes in oil, remove and salt. Beat eggs and add to potatoes until all potatoes are moistened. Add additional salt. Add 1 Tbsp. of oil to a skillet and pour in potato mixture. Cook until bottom is done and then flip like an omelet.

Quiche

Ingredients:
1 pie crust cooked
10 slices bacon cooked
4 large eggs
1 1/2 cup milk or half and half
1/4 tsp. thyme
1/8 tsp. pepper
1 cup cheese of choice

Directions:
Fully cook and crumble bacon. Mix all other ingredients together and add the bacon. Put in pie tin and cook at 375 degrees for 30 minutes.

Carmel Syrup

Ingredients:
1 1/2 c. white sugar
3/4 c. buttermilk
1/2 c. butter
2 tsp. light corn syrup
1 tsp. baking soda
2 tsp. vanilla

Directions:

Combine ingredients (except vanilla) in larger (it expands as it boils) pot. Bring to boil. Boil for 7 min. Remove from stove and add the vanilla. Great over German pancakes or with apple slices or pretzels.

Buttermilk Pancakes

Ingredients
2 1/2 c. All purpose flour
1 cup wheat flour
4 Tbsp. granulated sugar
4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 egg
2 cups buttermilk
1 cup cow's milk 
6 Tbsp. cooking oil

Directions:
In a large bowl, stir together flour, sugar, baking powder, baking soda, and salt. In another bowl use a fork to combine egg, buttermilk and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be slightly lumpy). If desired, stir in fruit.

Belgium Waffles

Ingredients:
1/4 c. melted butter
1 c. buttermilk (or milk)
1 tsp. vanilla
2 eggs (separated into yolks and whites)
1 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. sugar
1/4 tsp. salt
Cinnamon to taste (I just sprinkle a light coat over the top)

Directions:
Blend butter, buttermilk, vanilla and egg yolks in a bowl then add the dry ingredients and mix gently. In a second bowl dump the 2 egg whites after dividing the yolk out. Beat with blender until soft peaks form. Then fold in the whipped egg whites into the rest of the ingredients. Cook in waffle iron.

Breakfast Pasta

Ingredients:
8 ounce strawberry or raspberry yogurt
2 Tbsp. sour cream
2 Tbsp. pineapple juice
1 can pineapple (or fresh)
1 bunch grapes
1 green apple
1/2 lb Fusilli pasta

Directions:
Combine yogurt, sour cream and pineapple juice. Cut up all fruit. Cook pasta until done and let pasta cool. Combine fruit, pasta and add yogurt mixture on top.

Mom's Waffles

Ingredients: 

3 cups white flour 

1 cup wheat flour 

4 tablespoons sugar 

4 teaspoons baking powder 

3/4 cup powdered milk 

2 eggs 

2 tsp. oil 

3 1/2 cups water 

Directions: Mix dry ingredients and then add the wet ingredients. Thin with milk. Makes approximately 14 waffles.

Oven Pancake

Ingredients:
4 eggs
1 cup milk
1 cup flour
1/4 cup butter

Directions:
Melt butter in 9x13 inch pan (just place pan in oven as it is preheating.) Blend eggs, milk and flour together and add to melted butter. Cook at 425 degrees until golden brown.
