Sugar Cookies
Ingredients:
1 cup butter
1 1/2 cups sugar
2 eggs
3 Tbsp. sour cream
1/2 tsp. almond or lemon extract
1/2 tsp. vanilla
1/2 tsp. baking soda
1/4 tsp. salt
3 1/4 cups flour
Directions:
Cream butter and sugar. Add eggs, sour cream, extract and vanilla. Mix well. Add soda, salt, and flour and mix on low until just combined. Roll dough into a ball, cover and refrigerate 3-4 hours. Roll out on floured surface. Bake at 375 degrees for 6-8 minutes. The don't brown.

2 1/2 cups flour
3/4 cup unsweetened cocoa
1 tsp. baking soda
1 cup sugar
1 cup brown sugar
1 cup butter
2 eggs
2 tsp. vanilla
48 rolos
2 Tbsp. sugar
Directions:
Combine flour, cocoa, and soda, set aside. Beat sugars and butter until fluffy; add eggs and vanilla. Add dry mixture and blend well. Shape into small balls. Press Rolo into center of cookie and cover with dough. Roll cookie in sugar. Bake on ungreased cookie sheet at 350 degrees for 8-10 minutes.

Stir-Fried Chicken with Green Beans
Ingredients:
1/2 cup orange juice
1/4 cup dry sherry
2 Tbsp. soy sauce
4 tsp. Asian chile sauce (or 2 tsp. Tabasco)
1 Tbsp. toasted sesame oil
2 tsp. sugar
2 tsp. cornstarch
1 tsp. grated orange zest
1 pound chicken breasts
1 Tbsp. vegetable oil
1 pound green beans, trimmed
1/2 cup water
3 garlic cloves, minced
1 Tbsp. grated ginger
Directions:
Whisk orange juice, sherry, soy sauce, chile sauce, sesame oil, sugar, cornstarch and orange zest together. Pat chicken dry with paper towels and slice into 1/2 inch wide strips. Heat the oil over high heat and add chicken. Cook until no longer pink. Transfer to bowl. Add beans and water to skillet. Cover and return to medium heat until beans are bright green about 2 minutes. Uncover and continue to cook until water evaporates and the beans are mostly tender. Stir in the garlic and ginger. Add orange mixture and chicken to skillet. Toss all ingredients until covered with sauce.

4 Tbsp sugar
1 Tbsp salt
1 Tbsp yeast
3 1/2 cups warm water
1 can evaporated milk
12 cups flour
Directions:
Melt 1 stick of butter in the microwave. Add water to mixing bowl, add butter, then add sugar, salt and evaporated milk. Add yeast and then add flour. Mix and knead until ball is formed. Let raise for 2 hours. Punch down and form into 4 loaves. Place on pan (cookie sheet, bread pan etc.) Preheat oven to 350 degrees, let bread rest/raise for 15 more minutes. Brush each loaf with butter. Total bake time will be 50 minutes. After 25 minutes remove from oven and brush with butter. Place back in oven and cook for additional 25 minutes. Once done remove from oven and brush with butter again. Let cool.

Mandarin Chicken Salad
Ingredients:
Sesame Dressing:
1/2 cup corn syrup
3 tbsp. white distilled vinegar
2 tbsp. pineapple juice
4 tsp. granulated sugar
1 tbsp. light brown sugar
1 tbsp. rice wine vinegar
1 tbsp. soy sauce
1 tsp. sesame oil
1/4 tsp. ground mustard
1/4 tsp. ground ginger
1/8 tsp. salt
1/8 tsp. paprika
dash garlic powder
dash ground black pepper
1/2 cup vegetable oil
1/2 tsp. sesame seeds
Mandarin Chicken Salad:
4 chicken breast fillets
1 large head iceberg lettuce, chopped
4 cups red leaf lettuce, chopped
1 1/3 cups canned mandarin orange wedges
1 cup rice noodles
1 cup roasted sliced almonds
Directions:
Combine all ingredients for the dressing and blend together. Chop chicken once cooked and cooled and assemble salad. Mix salad and dressing right before serving.
Lemon Meringue Pie
Ingredients:
1 9 inch pie shell baked
1 cup sugar
2 1/2 Tbsp. cornstarch
2 Tbsp. flour
1/2 tsp. salt
3 egg yolks (save egg whites)
1/3 cup lemon juice
1 grated lemon rind
1 1/2 cup boiling water
Directions:
Combine wet ingredients except water. Add to dry ingredients and stir. Add boiling water and cook stirring constantly (over a double boiler would be best, if you don't have one be careful) Cook until mixture thickens and will coat a spoon. Remove from heat and place in a bigger pan of cold water. Stir. Meanwhile beat egg whites until beginning to get white and shiny. Add 1/2-3/4 cup sugar and whip until stiff. Pour filling in shell. Top with egg whites. Bake at 325 degrees for 10-15 minutes.

Boyer's Caramel Brownies
Ingredients:
1 (14 ounce) package caramels, unwrapped
1/3 cup evaporated milk
1 package German chocolate cake mix
1/3 cup evaporated milk
1/2 cup butter, melted
1 (6 ounce) package milk chocolate chips
Directions:
Grease and flour 9x13 inch pan. Stir cake mix, 1/3 cup evaporated milk and melted butter together by hand and press half of the mixture into prepared pan. Bake at 350 degrees for 6 minutes. Melt caramels and 1/3 cup evaporated milk together in saucepan. Remove pan from oven and pat chocolate chips into crust, then pour melted caramel over. Daub remaining half of cake mixture on top and bake for another 15-18 minutes. Cool completely before cutting into bars.

2 cups white flour
1 cup wheat flour
1 tsp. salt
2 Tbsp. sugar
2 Tbsp. olive oil
1 1/2 tsp. yeast
Directions:
Combine yeast, water, and sugar. Let stand a few minutes. Add rest of ingredients and knead well until forms a ball.
Let it rise one hour, spray a bread pan (or place on cookie sheet if making rolls) and let rise another 30 minutes. It tastes pretty good to brush them with butter here too!
Bake at 325 for 45 minutes (loaf) or 20 minutes (rolls) - depending on how large you made them. Makes approximately 13 rolls.
