Ingredients:
4 lbs chicken
3 medium potatoes
1/2 cup lemon juice
1/2 cup olive oil
6 cloves garlic, minced
1 Tbsp. dried oregano
1 Tbsp. salt
1 tsp rosemary
1 tsp black pepper
1 pinch of cayenne pepper
1 cup chicken broth, divided
Directions:
1. Preheat oven to 425 degrees
2. Place chicken and chopped potatoes in a large bowl and add lemon juice, olive oil, garlic, oregano, salt, rosemary, black pepper and cayenne. Toss to coat.
3. Place in a roasting pan. Drizzle with 2/3 cup chicken broth
4. Bake for 20 minutes. Stir and cook until chicken is done about 25 minutes more
5. Remove chicken and broil potatoes until crispy, about 3 minutes. Remove potatoes.
6. Add remaining 1/3 cup broth to juices and scrape up anything on the pan. The pour over cooked chicken and potatoes.

Cooked two dutch ovens of this while camping for 34 people. 1 1/2 bags of Costco tenderloins

3x the above ingredients for seasoning (1.5 batch in each dutch oven)
Added extra salt and pepper
