Chocolate Chip Muffins

Ingredients:
1/4 cup Ground Flaxseed 
1 cup Wheat Flour 
3/4 cup white flour  
1 and 1/2 teaspoons Baking Soda 
1/2 teaspoon Cinnamon 
1/4 teaspoon Salt 
1 cup Almond Milk and 1 tablespoon Apple Cider Vinegar OR
1 cup buttermilk
1/4 cup Vegetable Oil 
1/2 cup sugar 
1 teaspoon Vanilla Extract
1 1/2 cups Blueberries or other fruit or chocolate chips

Directions:
Preheat oven to 375F mix together the almond milk and vinegar; set aside.  In a large bowl combine together the ground flax seed, flour, baking soda, cinnamon, sugar and salt.  In a medium bowl, whisk together the oil, milk mixture, and vanilla extract.  Make a well in the dry ingredients and stir in the wet ingredients with a rubber spatula until just moistened. Fold in blueberries.  Scoop the batter into the prepared muffin cups.  Bake the muffins until the tops are golden brown and a toothpick inserted in the center of the muffins comes out clean which is about 15-20 minutes.
