2 Tbsp. yeast
1 1/2 cups water
2/3 cup honey or sugar
1/3 cup cooking oil or shortening
1 tbsp salt
2 cups milk (or 2/3 cup powdered milk + 2 cups water)
2 eggs
5 cups whole wheat flour (may use all whole wheat)
5 cups white flour
Directions:
Mix yeast and honey in water. Let yeast activate for 5 minutes. Then add cooking oil, milk, eggs, salt. Let dough rise for approximately 20 minutes. Add the flour last with the mixer running until dough pulls clearly away from sides of bowl (about 10 cups). Dough may still be sticky, knead for 10-15 minutes. Form loaves. Put into individual greased pans about 8 1/2 x 4 1/2 x 2 1/2 inches. Let raise for 45 minutes-1hour or until double in size. Bake at 400 degrees for 5 minutes then 350 degrees for 25-30 minutes or until golden brown. Butter top of baked bread if desired. Makes 3 large loaves.
